My New Year’s Resolution
I want to make a major change to my life in 2009. I want to save money on lunch.
I have a pretty sweet deal at work - we get a 20 percent discount on food in the cafeteria. I can eat for around $3-$5 a day and get a pretty good meal. I know it only sounds like a little bit of money, but at the end of the month the lunch cost is deducted from my paycheck. It’s more money than I really want to spend, especially since money is tighter than I guessed with the new baby.I’m challenging myself to actually pack a lunch three days a week in 2009. With the baby, I know I won’t be able to do it every day. I’m going to be realistic in my expectations, so I’m aiming for three. I always think lunch takes too long to pack, or I’m not eating as healthy as I like with my food choices of sandwiches and chips. So, I’m going to experiment with some other easy, low-cost options. I bought a nice Crock Pot at Christmas and made a huge pot of chicken chili for about $4-$5. We ate at least three meals from that chili. I’m also going to get it ready the night before.
